Almond Milk

Made from either fresh or dried almonds, almond milk has been well appreciated since ancient times.
For the Greeks, it was symbolic of creative energy, and in the Middle Ages it provided an excellent substitute for animal milk in times of need.
Taillevent recommends using almond milk in its \Le Viandier\" cookbook. Sweetened with honey and richly perfumed with spices, it was first used to make soups and subsequently in desserts."
